We are not able to create a Jira issue by highlighting the text in confluence. Do you have any Idea, what is going wrong?

And Yes I do have permission on both sides to create/read/write. And I also have tried it on different browsers and used in each the incognito mode as well.

At the end of the page, you have "Flush All". Please click on it and try.
Also check for any errors in the confluence log.

As I wrote everything regarding connection between JIRA and Confluence is correctly working.
In Confluence we do use JIRA issue macro and it works perfect.
JIRA Cloud and Confluence Server are connect through OAuth and they have the status green...
We can't restart JIRA since we are using the cloud version.

The problem is still there and we have only one connection (JIRA Cloud - Confluence Server)
I think this is a topic for the support team of Confluence.
