We run Confluence/Server 6.15. Is it possible to create forms in Confluence that are interactive, where people can sign, place check marks, and the form then automatically notifies the next person who needs to work on it. Would I use a task form for that? I have never done anything like this in Confluence, so any help/hint is appreciated.
Thank you!

If you are just about to "manage simple tasks" then it should be easier to do with what Confluence offers and collaborate on the page. As from what I read this seems to be the way to go (at least at first).
We do offer a plugin to build forms in Confluence - ConfiForms - Data Forms & Workflows
Something to look at when you need to do more and start to feel that inline task and standard notifications are not enough

Sorry, ConfiForms cannot be used to "search" documents. The purpose of this plugin is to help you to build interactive forms to collect the data from your users
