Our company will be merging with another company and we both use Confluence. We obviously only want to use a single instance of Confluence. Is there way to merge 2 instances of Confluence together?

To merge 2 Cloud Instances together, you need to migrate from one to the other. This is possible if you're an ORG-Admin. Atlassian also provides the Jira Cloud Migration Assistant.
However, migrations are always tricky. Depending on the size of the merge, I recommend contacting a local Atlassian Partner of your choice: https://partnerdirectory.atlassian.com/

At Emplifi, following a series of mergers and acquisitions, we merged 3 or 4 Atlassian organizations (depending how you count)
We partnered with Unicorn Systems and they did a fantastic job (link is to a short case study of our situation and solutions).
Using migrations assistant is OK, but there's a certain level of complexity where this is best left to the pros.
