You can already put emoji characters to folder names!

@Axelle Grioche I just use the standard "New folder" or "Rename folder" functions and copy the Unicode emoji character from an other location like this to the folder name. It just works.

This is definitely a good-to-know workaround but I think confluence should allow you to use the same emoji system as used for pages. This method renders the icon using system's emoji style which (depending on your OS) is likely different from the emoji style used for pages.
For example both this folder and this page use the same emoji but you can see the different styles used:
Also this approach leaves the folder icon there which I personally I think adds unnecessary visual clutter which is an issue when you're trying to use emoji to help make it easy as possible for the reader to orientate themself among a big list of nested pages.
