We are currently running Jira Server 6.11.1 on Linux and need to upgrade to latest due to a myriad of issues with confluence not properly saving and auth not working. I'd like to understand if we can upgrade directly to the latest version or if it's recommended to step through versions.
Also, our database is now listed as unsupported. What's recommended?

Do you mean Jira or Confluence? If it's both, then can you tell us what Confluence version you have?
I'm specifically referring to our confluence installation, but we have Jira Server and Core as well. Do they need to be upgraded in parallel?

You can probably jump Confluence directly to the latest version.
I say "probably" because there's always variables that might break it. However, I have just been through a whole series of Confluence upgrades, 5.2 through to 7.4. We had some hiccups in lower versions, but if you've got an off-the-shelf Confluence, you should not see any problems going from 6.0 or above to 7.4 in one step.
The two things that might bite you are:

Generally, you don't need to lock-step your Jira and Confluence upgrades - since Jira 5 and Confluence 4, they've been perfectly compatible as long as they're not too far apart.

Sounds good, much appreciated! From what I'm reading it sounds like you are correct. We just have an outdated postgresSQL DB that needs updating first before we can proceed. :(
