How can I find a list of articles that have recently been viewed by users?

As per my understanding on your post, currently confluence don't have that option. However, we need to rely on the Atlassian market place and use 3rd party app. Link below with comments and rating. The best part is the availability of "free trial" for the app at the moment.

On Cloud, that won't be a walk in the park, unfortunately. There is a fairly good explanation for this in this support article.
On an additional note - and thinking through on your mention of articles - if you are referring to KB articles in Confluence related to a JSM solution, there is a standard report in Jira Service Management for that. Just not sure from your question if that's of interest to you.
I'll share it anyway. From a Jira Service Management project with a knowledge base attached, navigate to Reports and find the Requests Deflected report. It has a metric called Articles viewed from portal:
In my demo site, there aren't any. But if there are, you can see which pages where viewed and how many.
