Selection Field / Variable for Templates

Hey Everyone

We will now start on bigger projects to work with Templates. In this case we need to have Selections on a Template like:

Status Project: On Hold, Startet, Finished, Review 

But i know only the option to create a value you can later not change anymore so it only helps wenn you create the Template but you never can change prober the Field later .. 

Any idea ?
