Is there a way to specify who get's an email reminder for an event type? I don't want everyone who has access to the calendar to get a reminder email. I'd also like to be able to enter email address for who should get the emails.

Unfortunately you can't specify who gets a reminder email, as it'll go to whoever has subscribed to or is watching the calendar. Those people can opt out of reminders for any event type, so they won't necessarily get the reminder, but there's no override for the event creator.
I wish the reminder was a bit more granular. We started using a custom event type to schedule who is on-call. Our intent was the person in the "who" field for that event would get a reminder email. They are not getting the email unless they subscribe, as noted above. But once they subscribe they get email everyday, even if they are not the person on call, the person in the "Who" field. This defeats the purpose of sending the reminder email to only the person scheduled.
Can you please open a feature request ticket to get the reminder with more options. To send globally to any one subscribing, as it does today. Additionally to send directly to anyone in the "Who" field (if they subscribe or not) - it would be nice to setup events for people so they get notified if they are subscribed or not.
