I am unable to create a table of contents that only lists subheaders under a specific header. It would create a dynamic list.
Example:

Header Fruits
Here you'll find a list of fruits:
{table of contents that only shows:
Subheader Apple
Subheader Pear
}
Subheader Apple
Apples are yummy.
Subheader Pear
Pears can be sour.
Header Veggies
Subheader Lettuce

When you edit the table of contents macro you have a few options to only include certain headings:
You can set your headings that you would like to see in the table all at the same heading level (i.e heading 3). Then use the minimum heading level and maximum heading level to only get those headings. The rest of your headings on the page will need to be different and that may make the page look funny.
The other option is to use the include or exclude headings field depending on how many headings you want to include or exclude. Naturally I would choose to use include if there are less headings to include than exclude, and vic versa for exclude.
