Which REST API can I use to pull content from my confluence pages?

I am interested in pulling content from my confluence pages as a json or xml in an automated way. Is there a REST API for this? The closest I could find was https://docs.atlassian.com/confluence/REST/latest-server/#content-getContentById.

You should be able to use any of the APIs under the "content" section to retrieve page content like you mentioned. You have a few choices, it just depends on what your needs are.
