Not very simply, but you could checkout the Chart Macro Source here:

And change: confluence-chart-plugin/src /main/java/com/atlassian/confluence/extra/chart/ChartDefaults.java

Lines 15-16

    public static final Font defaultFont = new Font("Helvetica", Font.PLAIN, 10);
    public static final Font titleFont = new Font("Helvetica", Font.BOLD, 20);

to whatever you want, then rebuild the package... then install it.
