Is it possible to undo changes in a database that was made when upgrading to Confluence 5.1 and use the old version of Confluence?
No.
Well, yes, if you can unpick all the changes that were made and revert each one manually. Which I wouldn't even start on before giving estimates of "years of work"
Your only realistic option is to go get the backup you took before the upgrade and restore that.

Hello Michael,
The databse transformations that occur uding an upgrade are one way. Once you have upgraded there is no way to rool back.
You would need to have a backup of your database and old <confluence_home> folder in order to get an older version of Confluence working again.
We have a documet that outlines a production backup strategy for just such cases.
Why are you trying to roll back your upgrade? What version of Confluence are you Coming from?
