We need to make a technical file for our product, which would consist of multiple confluence pages that often contain Include Page/Excerpts. The problem now, however, is that the content within the Include Page/Excerpt can be updated but this doesn't give our technical file a new version or changes its status from 'Approved' to 'In progress'.
Is there any way to make it so that a confluence page version/status gets updated whenever any of the content from the Include Page/Excerpt is updated?

If your company uses our Table Filter and Charts for Confluence app, and you collect the tables from different pages (or pages containing tables), you may use its Table Excerpt/Table Excerpt Include macros. The Table Excerpt Include macro will be able to show the "updated" meta data for the source page, it can also show, for example, "page title" and "page version" metadata. It won't be exactly your case, but you'll know when each source page was updated, whether it is recent or old. Please refer to our documentation for further information.

In general, you have no way of knowing if excerpts got updated.
One workaround in addition to what @Alexey Mikhaylov _Stiltsoft_ wrote is to use the https://support.atlassian.com/confluence-cloud/docs/insert-the-page-properties-report-macro/ . This is build into Confluence.
