We are running low on local storage on our confluence server (a VM instance). For performance reasons, I've gotten our OPS group to agree to double the number of CPUs and RAM on the box, but to deal with the disk space issue they are recommending moving the confluence data to NFS. Any know issues with moving to NFS?

No problem if you ensure that your network channel will give you the necessary I/O throughput for your VM. For Confluence, you'll still running into a local storage. NFS tipically has some issues regarding access latency that becomes more sensitive into virtualized environments.
If possible, iSCSI storage could be a very good option, giving you a better result than NFS shares.
