Want to build an entire new instance instead of regular upgrade path, then copy data, can it be done?

I am on Confluence 5.6.1 and I am wondering if it would be easier to build a new server and a new 6.0 instance of confluence and then just copy the data over from the old instance.  Has anyone ever done this?

Of course. The application runs from the installation folder, and determines if the home folder needs to be upgraded when it starts up. 

Consider reading the Upgrading Confluence Manually document.
