I default to using the methods Atlassian recommend in the docs - replicate the attachments and installation to another server, and take database backups using the database's standard tools regularly.
There are variations - mounting the attachments directory on shared storage, not bothering to back up the install relying on a separate installation, replicating the database to another place etc.
As we run the products on a VMWare infrastructure, we use VEAAM backup & snapshots to get a consistent backup. Still doing standard DB backups daily.
When updating I always backup the whole stack before (home, data & db backup). Never had a problem to get it restored, if something fails...
