What are the files to backup before updating confluence 6.3 to the latest version?

The simple answer is "all of them, and the database" - get a database backup, and then backup everything in <confluence install> and <confluence home>
ok, I don't know confluence, that's why I ask the question, I don't know which files or their location, that is the idea of this question, since a week ago I updated to the latest version and it was done without problems, but it left me all the default configuration files, and I don't know what they are, what they are called or their location... Your backup should be of the home directory, the installation directory, and the database. You don't need documentation to list them all (it will vary by version and type of installation anyway), just backup all three areas.
When you run the installer to do the upgrade, it will tell you which files you have modified away from the distributed default versions, so you know which files you may have to modify to incorporate any customisations you have made.
If you look at "system info", this will also list all the files you have modified. Generally, most people will find only one or two modifications - an application propterties file (in a sub-directory of the installation directory), and the config file that contains the database settings (this is in the root of the home directory)

As @Reese says, a complete backup (snapshot) will work really well.
