Where do i see variable macro?

variable is just available for pages created from a blueprint (https://confluence.atlassian.com/doc/blueprints-323982376.html#Blueprints-Customizeblueprinttemplates)

If you want to add a dropdown in a page you should use an external app like this one https://marketplace.atlassian.com/apps/1214971/handy-macros-for-confluence-formatting-and-interactive-ui?tab=overview&hosting=datacenter
