As declared, does Google Analytics for Confluence collects only minimal data and stores in AWS cloud.
How my content and secured data, which is aggregated across Cofluence spaces will be used by this app?
If you’re talking about Google Analytics in Confluence I can help you.
If installed, on your behalf, it sends your page and space details and your Atlassian Account ID to your Google Analytics account.
It also sends your instance base URL (https://yourinstance.atlassian.net) and whether the user is logged in (yes or no) to our google analytics account.
Other than that, no further information is logged.

Actually, the question was about the original Google Analytics and it's data transmission between vendor's AWS and data in my Confluence Knowledge Base.
