If the initial question was not about manual coloring ( @Kris Dewachter has kindly guided you through the case) but how to apply conditional coloring or highlight cells while hovering on them, there is no such feature out-of-the-box.

We develop the Table Filter, Charts & Spreadsheets for Confluence app (maybe you even have it in your instance) and its Table Transformer and Table Spreadsheet macros can do the trick.

If this is your case, please let us know and we'll help you to adjust your macros.

Welcome to the Atlassian Community.

When you select the cells, you can click the "Cell options" icon, and the select the background color.
