Here's my problem:
I have no idea how to insert that non-breaking space. I've tried finding a macro and I've tried using ' ', to no avail.
Help would be appreciated!

As you're using a hosted Confluence then I would suggest you to raise a support ticket at our support.atlassian.com and then take a better look into this behaviour with one of our Engineers, this would be the best approach here.

The Symbol menu has apparently gone to menu heaven?
The only work-around I've found i to insert a non-breaking in a Word document, then copying it over. This does what I expect. But it is not, shall we say, super convenient.

Under the Symbol menu, first selection right before the & (it is a space, but once you mouse-over it correctly, it will stay "non-break space"

Option + space bar is supposed to insert an ascii non-breaking space (ascii 255) on Macs.
