Hi,
I understand that you are migrating from ZOHO to Jira Server and are looking to make sure that your server running Jira has sufficient resources here. I recommend checking out our KB in Jira Server sizing guide. It has some details on how to categorize your deployment. In your case, I suspect your system will be either Mid or Large scale, owing to the large number of projects you have. But I recommend you compare with that guide, for example if you have a very large number of custom fields, (more than 300) then you could be considered Enterprise scale.
Also note that this guide was created back for Jira 6.3 and presumes that this server is dedicated for Jira server. That tends to mean that the database server will usually be on a separate server. If you find that you are planning to use Data Center, then you should refer to the current Enterprise Sizing guide for Jira instead. It does not provide as clear concrete numbers though, and would require a more in depth analysis by support or a technical account manager.

This should insure that Jira's performance is not being bottlednecked by CPU, disk, or memory, which are typically the most common points that can cause poor performance.
