Add build version (sprint number) into my Project?

On the Build Version (sprint ref) drop-down box we have the number up to 2.50. How can we add new numbers to that list?

Sorry, the question is not very clear to me.

Is the build version is the 'Version' field ? or the sprint field?

Or is that a custom field ?

I believe that's a custom field.

Ok. A JIRA administrator will be able to add options to a custom field.

Refer to https://confluence.atlassian.com/adminjiraserver071/configuring-a-custom-field-802592532.html 

Navigate to the Custom Fields page, locate the desired custom field <Build version?> and choose cog icon >Configure.

There you should find options to add the additional choices.
