My Org admin is trying to upgrade my access from User Access Admin to Org Admin and all of the descriptions online do not match the actions we can perform. Does anyone have screenshots or steps to describe how to do this and do you know if there are any restrictions on the number of org admins we can have?

You can provide this documentation to your org admin. They will need to follow those steps in order to grant that role to your account. From that page:
To give someone an organization admin role:
Go to admin.atlassian.com. Select your organization if you have more than one.
Select Directory > Users.
Find a user, then select their avatar or Show details.
From the 3 dot icon at the top of the page, select Assign org admin role.
Select Assign role to confirm.

On the User List, select . . . > Add user to group
jira-admins-xxx, jira-software-users, and site-admins

Adding users to a group directly is not always going to work for all Atlassian cloud sites today, when it comes to granting org admin role. This did used to work in older versions, but in the current state, the org admin has to view the user account and then use the ... menu to grant that specific role instead of only granting it via group membership
