You could delete the Description field from the Edit Screen and create an action button for editing Description.

Of course not! It would be very unefficient way to do it for all Workflows but you also never mentioned it should work for all. It is a suggestion for protecting an field value in a specific project

Unfortunately, I don't think so there is any direct way to prevent such accidental changes.
I was giving a thought about automation rules but it would be too complicated to implement as it's specific to actions as triggering point.
