1. I am able to add states and transitions in the workflow, but unable to delete them. I need to clear out the states and transitions I added to experiment.
2. We are using "Software Simplified Workflow Scheme". I have no option to make a copy of it, so I can modify it and apply the modified scheme for the project. As a project admin I think I should be able to do that.
3. I was not able to figure out how I can add the "Acceptance Criteria" field or other fields in the tasks that I create. I think I don't have the permissions.
4. Is there a way to auto change state of a task after certain duration?
Simplified workflows do not work that way. All you can do with them is add status, and map them to columns on the board. If you remove them, the status remains on the global list. There's no backup copies or inactive access, you only get to amend the workflows.
You should ask an admin to tidy up all your unused status and remove inactive workflows.
Fields have nothing to do with the workflow. As a project admin, you cannot change fields, again, it's an admin task.

3- Delete Status
4-Change the workflow copied by the original
