I'd like to delete some old projects, but we'd like to backup the project beforehand.
What is the best way to do this? It seems that I can do an the entire jira backup, but how do I restore a single project?
Alternative could be that I export the issues in to CSV and import as CSV when required. But what if the field does not exist anymore... (Does XML provide a better solution?)

Nice post. I've actually archived into a CSV file (with all fields), rather than PDF. I feel that a CSV file would give me more flexibility to restore the issues. However, as you mentioned, we do lost a lot like linking issues.

Option one. It's the easy way to export your data but if you have many issues when export to waste to much time and size file verry large so i recommen you use option two (file just only data)
Optione two (file zip backup have config system,data,info jira,project..)
Jira Admin ->Jira settings->System->Backup Manager. In there you have two options: Create backup for cloud and Create backup for server
