Best practices for IT Ops Project and task management in Jira?

As an IT Ops/Service Desk we manage projects for things like upgrading servers, outfitting employee's desks with computers, setting up new software solutions, etc. The ways of Agile, such as Scrum, don't always apply to us. It's more ITIL around requests, and think "Planner" or "Microsoft Project" or "Trello" for our area. 

So are there any learning or training resources around Jira that apply to us folks? 

For example, how would an "Epic" apply to us? 
In this guide here, Jira Epics Tutorial, its opener is "we'll explain how to use epics in agile software development". That's not me/us. So where's our guide?
