I'm new to JIRA.
I'm carrying out some project management duties at my internship and I'm trying to figure out which project template would work best with the needs of the marketing team I work with.
Long story short, I want to create tasks with sub-tasks nested under them, and I also want to establish due dates for each individual task and not just an entire sprint. I tried using Kanban and Agility templates but found myself trashing my projects because either I couldn't add due dates to tasks (Kanban) or I couldn't add subtasks (Agility).
Where should I go from here?

Actually, you should be able to add the Due date field to a Kanban Project. Can you provide me what exactly is not available for you on this template?
Anyway, I can recommend you other two possible templates that can work for your business:
1 - Project Management
This is a template that uses only Core functionalities, so if you decide to use only this solution, the cost of your application will be decreased which makes me think that this can be the best option for you if you will not need development tools of JIRA Software (Sprint, Release, Complex reports, etc)
You will be able to create tasks, link sub-tasks to it and add the field Due Date where you can configure a single value for each issue.
2 - Scrum
You will be able to do all the options provided on Project Management template and some extra functionality of JIRA software (Sprint, Release, Complex reports, etc), however, you will use a license of JIRA Software product which is more expensive than a Core license.
