Best way set up a external users so they only see their project and don't see the addons on top nav

Those new to the Atlassian Community have posted less than three times. Give them a warm welcome!
We are on Datacenter version 8.20.10. We want to explore creating accounts in JIRA for external vendors that are not in our Active Directory on invitation.
I was able to invite and create an account in JIRA, but noticed that the screen did not have the captcha option enabled , but it is enabled on then Service Center login screen for invited users. Can we enable the captcha on the login screen of the JIRA login screen?
Next questions I have is, How can we not show all the top navigation options for our instance for these external users? I would ideally want them to only see Projects and Boards, they won't be planning or using planning poker, Data Plane reports and other adds for our instance.
