Best way to setup this type of project?

We have our kanban board to track the overall status of the project. I had originally created it as an epic and then have tasks related to it, but realized that tasks end up coming up as their own cards on the kanban board?

Subtasks are able to show up under tasks, but can they show up under epics? What about due dates for subtasks? Does Jira offer this granularity?

The issue type hierarchy for Jira is

Epic
|-- standard issue types
    |-- subtask issue types

For an issue at a given level, its parent issue must be of a type from the level directly above, and its child issues must be of a type from the level directly below.

So, no, subtasks cannot be created directly under Epics.

You can use Start and Due dates for all issues types.
