I run the Jira system in the organization I work in, and I wanted to block the possibility for the different users of the system to change the fields on the page they opened in creating a new task.
Attached is an illustration.
How do I block the ability to set or subtract the fields from the user?

Hi Eitan,
Unfortunately you can't (unless you go scripting or something). By default All Fields will be shown but the user is allowed to customize this. Shouldn't be a problem I guess, unless you want users to fill in all fields.
In that case it would be better to mark these fields as required. You can read more about it on the Knowledge Base article: Specifying field behavior.
Users will still be able to hide these fields BUT will get an error message when trying to create an issue without filling that particular field.

You can also use different screens to control what users can do - but it is global, not per person. For instance we use a different screen for Create, Edit and View that allows users to create but not edit a field. But they can still view the field. If users are savvy, they will figure out they could change it through Bulk Change if they know how to do that.
