We have groups of teams with different activities, several of them when giving access to jira can see all the projects, I have generated a group to exclude them and still the user can see the projects and their issues, (what they cannot see is the kanban or scrum board).
I would like to know how to configure the environment for three groups of teams, of which two should only interact in their projects.
How can I do this?

There is no "block" in Jira, it works in a mostly permissive way. You don't block access, you allow it.
What you need to do is take away whatever permission is letting people see stuff they should not. Jira is mostly open by default, and does it by having permission schemes that include the permission "Browse project: any logged in user".
You'll need to go through the permission schemes of the projects you want to hide, and remove that, replacing it with roles (ideally) or groups that you do want to have access to the projects.

In Jira Cloud, you can leave projects open to any logged-in users or restrict them to particular groups or roles.
The permission that deals with this in company-managed projects is the Browse Projects one - this permission allows people to view the project in the Projects directory, and view individual issues in the project and while searching Jira. To restrict access to a specific project for specific users, I would suggest the steps on the following documentation:

For team-managed projects, you can private the projects directly on the Project Settings > Access > Change project access > Private.
