My Goal is to have 3 projects under one project board so that we can put all different project tickets into a single sprint. I have a separate board from the ones mentioned later that has a filter with multiple project types included (1 Service-Project, 2 Software-Projects).
How do I get information across all projects to display in the summary section?

The short answer is you cannot. The Summary page provides information for the project, not for a board.

In your image you are seeing the Summary information for the project that is shown in the breadcrumbs at the top - "Workday Soup".
To get something similar spanning multiple projects you would need to work on constructing a Jira Dashboard to display similar widgets based on the filter you are using for your cross-project board.
There is a change request to have the option for a Summary page per board, though it specifically asks for that in the context of multiple boards for a single project.
