Can I Implement Custom Statuses and Transitions in Jira?

I am using Assembla.com for bug tracking, and now i want to move to Jira.

The two systems are quite different both with UI and the way case status when a case is opened or closed.

Currently in Assembla.com when a case is open, there are many different status i can selected. For instance a case which is open can have open status such as:

1. New

2. Waiting for more info from customer

3. Need more samples from developers

4. Need more discusstion

5. Test

6. Fixed

7. Not satisfied yet

8. Additional query!

9. Etc...

Let say an issue/task is opened. Every time the developer save task status as fixed which means that he might the task is completed but the task is still open with status fixed, when i check the work and i am not satisfy then i change the case status to not satisfied yet. Until i am satisfied then i will select case status as completed then the case will be closed.

So my question is how can i add more data fields for case status such as shown above in Jira?

Or maybe the way Assembla handle open cases are not logically enough.

Please help me.

In Jira you do this with transitions. E.g. we have implemented a workflow where issues "Fixed" is set to "Technical Review" (basically Peer Review). If the Peer Review fail, the transition back to "Open" is initiated by the reviewer. Also apply for e.g. "Ready for Test".
