I would like to change Priority to Severity in JIRA for ABC project without affecting others projects.
Can anyone please help me out here?

The priority field is a system field and cannot be renamed, so you would have to create a custom field named Severity.

I got the plugin Translation in JIRA. But the thing is this change reflects in all projects.
Yes, translations affects the whole system, it cannot be set to just one project.
