Can I change how sum of time spent is displayed on issue cards on the board?

I would like the sum of time spent to display in hours, not days-hours-minutes. Is this possible to customize?

Yes you can.

You need to go into administration ->System ->Time tracking.

Deactivate time tracking and then select time format to hours. Then re-enable time tracking.
