Is it possible to generate a Ticket from email in the Projects with Project Type as Software?

Yes, it is possible to Create ticket via email in a Software project.
For this, you need to configure Mail Handler for that particular project.

Thanks for the response. we went through the documentation and tried it.
At some point in the documentation it indicates that there is Service Desk project which needs to be created.
we are using JIRA on the could can you please confirm if the help is applicable to the JIRA cloud as well?

Actually, you did not mentioned which hosting option you have been using hence i have attached the doc for Jira server application, but the thing is for all we need to configure the Incoming mail and then need to add mail handler for this.
