Can I create boards for other project types than Kanban and Scrum?

I want to use a board for visually shifting a Process project's workflow statuses. But AFAIK, a board can only be created for Kanban and Scrum project types.

You can. You can create a board from an existing project or a filter. The type of the board will be Scrum or Kanban but the project itself can be of any type and use any workflows. You will then map the workflow statuses to whatever columns you want on the board.
