Hi Jane,
If you allow the field to be populated only during Create that's easy. Just put the field on the Create and View screens, but remove it from the Edit screen.
If it needs to be locked down later in the process, that you might be able to do that with ScriptRunner Behaviours app, but not sure if that works or if there is another way.
