Can I still see my 'done' tasks even if I used JQL to filter them out?

I used the JQL : (resolution = null OR resolutiondate > -5d ) and it worked.

Is there a way I can go back and see all the done tasks if I need to without having to go back to the JQL query and edit the 'days' field?

No. 

You've written JQL that says "show me this set of issues".  Asking the machine to arbitrarily understand that you don't now want that without telling it so is not going to work.  You need to tell the computer that you have changed your mind by giving it a new filter.

Thanks for the response Nic. Do you know of another way in which I can hide the done tasks, without using the JQL query, and be able to see them later on if i want to?

No, you need to use filters to do this.  The only thing in Jira that gets you an issue without using a filter is really the issue view of an issue you've noted down or bookmarked.
