We are currently using Jira Servicedesk, but I like the product so much I was thinking about how it could be used to solve some other problems.
Here's the scenario: we are trying to find a product or products that will support our sales ops process. We have a long sales cycle and numerous approvals and requirements throughout. We also need to require documents be attached at various stages. A catch though is that one project may have multiple components.
I've looked through some of the templates for Jira and it seems like some of this could be accomplished with the process template, but I'm not sure how/if we'd be able to make it scale to handle our needs.
Jira has very flexible workflows that would allow you to customize your own solution(s) for various processes. You can make specific fields required on transition screens to ensure that required information is gathered as users follow the workflow. You can have multiple issue type in a single project and each issue type could have it's own workflow. This could help meet your multiple components need. You should give it a try, build out your flows and see how it goes.
