Can i create a separate org in jira for a customer?

My company has a new client and we want that customer to be private and not to view our activities?

You can certainly create multiple orgs. You can have multiple orgs per Project or associated with separate projects. If in the same project your customers will see the same project portal but cannot share outside of their org.
