Can we configure multiple mail servers for a single project. One mail server & handler should create bug issuetype and other should create Task

Yes, you can set up multiple email servers and inboxes and handlers to work with them differently.

The email handlers do not actually belong to projects directly, you have to give each one a default project (and issue type) for issue creation.  You can even create many handlers that will create the same issue type in the same project.
