Im attempting to add a Story and want to add Tasks underneath with subtasks after that. Im finding that this is not possible. Am I doing something wrong? We are JIRA Cloud users.

No. Sub-tasks are the only way to break up your issues into fragments.
In a team-managed project, you can only define a single sub-task type, but in company-managed projects you can create many types with different names.
To add to this, I would consider why you need to break Stories into Tasks, then further into Sub-tasks.
This is more of a process or ways of working thought, but Stories are usually a couple of days of work, with Sub-tasks breaking them into their component parts.
What's the use case to go even further than that?

Hi @Shirlyna Richter ~ to add to Nic's comment, you can link your Tasks to the Story (using "Relates to" link type or possibly even "blocked by" for dependencies). HTH
