I'm just curious if there is a way to customize the content of the email notification to include additional fields (ie. Epic Name, Labels, End Date, etc.) in Jira Cloud.

Carlos is technically correct, but there is a workaround.
It's not exactly a perfect solution, as you'll end up with 2 emails, but I suppose, you could turn off the default notification from Jira when an issue is created.
The workaround:
Create an automation rule when an issue is created as the trigger.
Then, send an email as the action. Using Smart Values, you should be able to extract the field data that you want to include in your message.
