Can you set default Project Type for a specific project?

I am obviously a total newbie to Jira, and now I'm in charge of our upgrade to our own instance of Jira for my team. I hardly use Jira yet, but had several questions.

1. Can you set default Project Type for a specific project? For example: tasks in Project 1 will be in the Kanban format, and tasks in Project 2 will automatically be in the Software Dev format? Or do you just have to select the format with every single ticket?

2. Relatedly, can I select the fields in the ticket based on the Project its in.

1. I'm afraid it's not clear what you mean by "project type" or "format"? Do you mean "issue type"? Or specific configurations for field/screen/workflow etc?

2. Yes, although it can be quite complex. You set up "screen schemes", "field configuration schemes" and "field contexts" and then you can select the ones you need for each project.
