Can you use an application link to O365 and an outgoing mail server

We've been asked if we can send Jira notifications from 2 different email addresses. Basically if it's an issue in Project A and B, notifications should come from email Y and if it's an issue in Project C and D it should use email Z. Email Y is a Google email address while email Y is a Microsoft email address.

I know we can't set up 2 different outgoing mail servers, but someone suggested creating an application link to O365 for the Microsoft email and using Jira's SMTP Mail Server for the Google email.

I don't know much about application links and the documentation for it is a bit sparse. I've searched the community and haven't seen anyone suggesting this as a workaround. Before I go too far down the rabbit hole (and potentially screw up our dev instance), I thought I'd put this out there and see if anyone with more Jira knowledge can give me some advice. Is this a possible workaround or a harebrained scheme?
