Can you use two workflows on one project?

We have an existing workflow for the current project. We added the sub-tasks to this project and we created a sub task workflow.

My question is can I just associate the new sub-task workflow to the project and keep the existing workflow for the project tickets? Or do I need to create a whole new workflow that is comprehensive?

Yes, that is why you have the workflow schemes.

How do I remove a workflow if two are associated with a project? As seen in this screenshot.

Just kidding this upload image or text file doesnt work.

But i'll elaborate. The project I am working on has two schemes, a jira default and the one i created. How do i remove the jira default?
