Hi all - we just implemented Jira and we love it. but now we have a challenge in capacity planning: we work a lot with freelancers who have weekly capacities free, but they vary from day to day. (Not like an employee when 40h/week = 8h/ day). How can I still plan my sprints according to the available daily capacities?

If you consider using plugins you may try a resource planning plugin ActivityTimeline. ActivityTimeline has a workload panel where you can check the capacity of each freelancer, workload, logged time (if you use this option), and availability.
You can set different capacity for every day or create a workload scheme or set a tasks per day limit.
You can trial and check if this works for you. Hope it helps.

When you do your sprint planning, do you know they availability for the sprint? If you do not know they availability for the length of the sprint, it's a bit tough to talk about capacity.
If it's change too much and unable to predict, I would recommend that you go towards Kanban.
